My Truths for Today!

  1. I cooked a pot roast today and left the plastic on the meat! I have got to slow down and focus on the present more!
  2. Ever have those days where you are failing as a mother? I had one of those days today, can you tell from #1. I felt like no one was listening to me and now as I am reflecting back on my day and week it is I who am not listening to my children. I really need to slow down and stop rushing through everything…any ideas on how I can do this will be greatly appreciated.
  3. I am really happy that we got to do something as a family last night. It was really extra special because we never go out on a school night but last night we went to “A walk through Bethlehem”. It was a really great experience they set it up as a sort of walk through play-we adored it so much.
  4. I have still only got two kids presents for Christmas! I am stressing..and I would still like to get a few family presents for other families.

Something I am really passionate about is HEALTH! It started with one book then I just started searching for more information on ways to be healthy in today’s world. When I first learned I was pregnant I was extremely cautious of things in my environment which could affect the health of the baby inside me as well as my own health, and then when our children were born I wanted to raise them in this way.

Watch this video, please it will help explain my thoughts and beliefs.

Take a deep breath, it is a lot to take in.

I feel guilty not knowing what is in my home that could be harming my children, but together we can find ways to protect our children from the unknown through our drive to understand and seek knowledge as a whole.

Eggnog Bread + Giveaway!

Before I share this wonderful recipe I found on Twelve O Eight, I just wanted to give a warm thank you to Tanya Runkle for this amazing recipe. I have double the recipe at Fruit from Washington but the original recipe amounts are in parenthesis. The original recipe makes 3 mini loaves and the doubled one I am sharing makes 6.

Eggnog Bread Recipe

3 cups Eggnog (1 1/2 cup)
1 tablespoon + 1 teaspoon Rum Extract (2 teaspoons)
2 teaspoons Vanilla Extract (1 teaspoons)
2 cups White Sugar (1 cup)
1 cup Butter Flavored Shortening (1/2  cup)
4 1/2 cups All Purpose Flour (2 1/4 cup)
1 tablespoon + 1 teaspoon Baking Powder (2  teaspoons)
1/2 teaspoon Salt (1/4 teaspoons)
1 teaspoon Nutmeg (1/2  teaspoons)

Preheat oven to 350 degrees.

Measure out the dry ingredients Flour, Baking Powder, Salt, and Nutmeg and set aside. Mix Eggnog, Rum, Vanilla, Sugar, and Butter flavored Crisco in a bowl until well combined. Then slowly add the dry ingredient into the wet ingredients. Warning-Batter will smell like Christmas and make you feel warm and bubbly!

Lightly grease the bottoms of your baking pan and pour mixture into pans evenly. Bake for about 35 minutes or until golden and center springs back to the touch. Allow baked bread to cool in pan about 20 minutes-I know-I know hot desserts are the best, but if you want them to set and NOT fall apart you have to wait! If you can live with a warm crumbly mess of deliciousness dig right in! To remove carefully run a flat mini-spatula around the edges of the bread to loosen allow bread to completely cool on wire racks or parchment paper spread out on your kitchen counter.

Okay let’s talk about the dirty work…cleaning.

My Truths for Today!

  1. I have gained 10 pounds since September! My jaw dropped when my daughter said, “Mommy I’m only 40, how many are you?” I stepped on and I was in shock! 10 pounds more than the last time I weighed myself!! Where in the world…then I thought about it..I haven’t drank a smoothie in how long, how many glasses of water have I had today, and when was the last time I even exercised!?!? Geez…I have to start taking care of me again!
  2. I do love Christmas-music, special treats, Christmas movies, decorating, holiday clothing and pictures, hot cocoa, Christmas lights, making gingerbread houses, and FAMILY!
  3. Christmas sometimes makes me crazy because I feel like I must give them everything they ask for-why I don’t really know where this feeling/or need to do this comes from but I know it will not truly make them happy.
  4. It hurts that we have to share the kids on Christmas because they don’t get be apart of our Christmas traditions and they miss out on so much…which upsets them when they get home and see pictures later, but I guess they do get to take part in their Mom’s Christmas traditions and share those special memories with her. 🙂
