Meatless Monday

Meatless Mondat collection from foodiecrush

I found another great site I can’t wait to share with you all!

It’s called FoodieCrush, and it’s my new go to place for a great recipe! Heidi has created her own little online world of food Heaven. She has a food fetish, and thank goodness that she decided to share it with the world, because she has great taste.

Starting on the right is a Tortellini Soup with Artichokes which looks so hearty, warm, and with just 30 minutes of prep + cook time till I eat-this is the recipe for me.

The next is a cheesy, gooey, totally adult grilled cheese-it’s a Spinach and Artichoke Grilled Cheese Sandwich. No lie-it just made my stomach growl! Just thinking about what this would smell like makes me want to get into the kitchen right now and make this!

The best was saved for last, it’s a Slow Cooker Vegetarian Lasagna Soup. Any recipe in a slow cooker is a winner in my kitchen but a LASAGNA SOUP-I may just need to create a whole new level of awesome recipes to add this one to it. This one has pasta, cheese, cheese, veggies, and more cheese! There is a meat version available if you prefer to have Meatless on Monday and then the meat version on Tuesday-hey I won’t judge you, but I may join you.

Happy Meatless Monday!

Boys & Girls Clubs of America + #CyberSafety with the #Cybertribe #MC #Sponsored

I participated in an Influencer Activation Program on behalf of Mom Central Consulting for BGCA. I received a promotional item to thank me for my participation. #CyberSafe #CyberTribe #MC #sponsored

In case you missed it, June is National Internet Safety Month. It’s a great time to brush up on internet safety tips and be aware of issues like cyber-bullying and privacy settings. Here is a great video highlighting some great information about Social Networking from the Boys and Girls Clubs of America’s Cyber Tribe.

I have to admit I do consider myself to be pretty cyber savvy as a blogger, but even I didn’t know that 51% of teen said they have given out personal information online and I don’t know more than half of those code words teens are using these days like LMIRL which means “Let’s meet in real life”. Pretty scary right?

The Boys & Girls Club is running it’s Cyber Safe Futures campaign to spread awareness about Internet Safety. This year they have turned the tables have asked real life expert teens, the “CyberTribe,” to answer your cyber safety questions throughout the month of June. Pretty cool right? I know this will get my preteens more interested in cyber safety and I feel like it helps give adults a better view of their world online.

As part of the Cyber Safe Futures campaign, parents can ask the Cyber Tribe questions and they can also learn more about cyberbullying, online privacy, social networking, and mobile smarts through an abundance of resources. One resource is an online glossary to help parent stay on top of technology and social network trends. BGCA is also entering everyone who submits a question to the CyberTribe into a raffle to win one of three grand prizes — an iPad and $500 to the Club of your choice!

I encourage you to check out the Cyber Safe site and take advantage of the resources available. While you’re there, make sure you submit your questions to be entered into the raffle!

Good Cook ProFRESHIONAL Cut Fruit Bowl + Watermelon Cooler + Giveaway #freshfuitbowl #BBBProduct

Good Cook Fresh Fruit Bowl

As a part of the Good Cook Blogger program I was sent a ProFreshionals Cut Fruit Bowl and it’s huge! A whole 7 quarts of capacity, I knew I’d be filling that baby with a whole bunch of watermelon because the kids and I LOVE watermelon!

This bowl is perfect for watermelon as you can see from the pictures below it has a strainer built in which allows the juice to drain out and keep your fruit fresher longer!

Good Cook Profreshionals Bowl

In college I worked in food service part time, and there was a very lovely lady named Karen, who taught me how to cut a watermelon. I was the Salad Bar Girl at NM State as Rey would call me. Below you will find the step by step how to.

Good Cook Fresh Fruit Bowl-How to cute a watermelon

After your watermelon is cut place it into your bowl. I leave it in sticks rather than cut further because it’s easier for the kids to grab and well let’s face it-as much as I would love for them to use a fork they never do.

The watermelon can now be used to make a simple, but refreshing watermelon cooler!

Watermelon Cooler How To

 Recipe for Watermelon Cooler

  • Watermelon chunks (1/4 of a medium watermelon)
  • 1 lime
  • 1 cup of ice
  • Sweetener of choice if you desire (optional)

Tools you will need:

  • Knife
  • Strainer
  • Juicing tool for lime
  • Blender
  • Glass to serve
  • Cutting Board
  1. Add ice and watermelon as much as you can to the blender. No need to worry if it doesn’t all fit you can throw in more later.
  2. Juice the lime, I started with half of the lime juice and that was enough for us.
  3. Add a sweetener which is optional. Our watermelon was plenty sweet so no need.
  4. Blend until well mixed. Add more watermelon now if you need too.
  5. Strain into a glass and enjoy!

Pinkalicious Party

This post does contain affiliated links to help support my family, thank you for your support.

If you don’t know who, or what, Pinkalicous is, it’s a book series from Victoria Kann based on a little girl who loves pink, cupcakes, and her imaginary unicorn Goldilicous. We actually won a set of three books about a year ago and Sadie immediately fell in love with them! Which is why she wanted to have a Pinkalicous themed party.

Dress up and photo ops are always fun! We got the props from the Dollar Store.

We posted a Pinkitius warning on the front door that I created, so cute!  I found the idea on Pinterest, but created my own.

Most of the party decor was clearance from Valentine’s Day. I plan far in advance for parties and stock up on clearance items to save money.

We also had green food to go goodie bags to help the kids cure their pinkitius.

These are the links for the signs I created. The true blue cure for PINKITIUS WARNING Pinkitius

I was determined to make this cake I found on pinterest! I tried to and learned ALOT! I used marshmallow fondant, regular icing, and I used a mix of regular cake mix and pound cake mix.

Tip #1 Use dowels for a layered cake, #2 Keep it in the fridge until party time, #3 Always have twice as much icing as you think you will need, and lastly, #4 Use pound cake much more sturdy.

This was one of our photo opportunities and it turned out amazing, thanks to my mom! She did a great job! All the supplies came from Wal-Mart and the Dollar Store.

Pin the Cherry on the Cupcake.

Another creation from my mom.

Here are our sweets and treats on our amazing lemonade stand-that my mom and brother made.

We served pink popcorn, pink pretzels, pink lolipops, pink marshmallow pops, and of course pink lemonade.

We also let the kids color a pink cupcake and decorate their own wand.

Here is the link to my Pinkalicous Party Board on Pinterest where I get all my party planning ides from.

Thanks for stopping by and I hope you found some inspiration.

Truthful Thursdays

Where I will share my truths as a Mother & Stepmother.

My truths for today.

  1. I am addicted to ebay…its bad I just found it and it is the holy grail of Barbie finds-some good-some just plain outrageous! I have been able to get a few good steals even after shipping. Here are a few of my purchases this week. Ebay Addiction
  2. We are very excited about the upcoming Fourth of July holiday! What are your Fourth of July traditions or plans this year? We hope to catch a light parade, cook out and enjoy the day and then watch the fire works with family!
  3. I am still working on the Pinkalicious post, the Getting Ready for Kindergarten Series, and the a GIVEAWAY for a Good Cook fruit bowl that you are going to love!
  4. This time of the year I have to admit I am still pretty off track (lazy), barley shower every other day and usually stay in PJ’s all day with the kiddos. Unless we have to go grocery shopping then I must get dressed. :/ Someone, anyone please tell me I am not the only one.

These are my truths of the week, I hope you share yours!

Meatless Monday

Meatless Monday is back! I have missed a few, but I am getting back on the ball again.

Meatless Monday round-up from kalyns kitchen

Today I wanted to share from a site I found and love Kalyn’s Kitchen. She creates and shares seasonal, low glycemic index meals for healthy eating, weight loss, and blood sugar control.

Starting with the left side we have Kalyn’s Brown Rice and Pinto Bean Salad with Poblano and Red Bell Pepper if I served this to my kids they would have a hissy fit-no lie-picky picky picky-no mixing allowed. So I would leave some beans and rice separate before mixing this all up for them.

The Pinto Bean Salad with Avocado, Tomatoes, Red Onion and Cilantro is on the top right and is something I am dying to try-it just looks so fresh and full of flavor! I would this serve with quesadillas and again leave some beans out for the kids.

The last recipe I have for you today is the Spicy Black Bean Patties with Cilantro, Guacamole, and Tomatoes. This will be a first in our family, but I think they will be a winner because most of us really like black beans. I would serve this with a side of nachos and heavily encourage the kids to try it! I will Instagram when we try this recipe out. Follow me on Instagram @Mom254321.

Big thanks to Kalyn’s Kitchen for creating these amazing recipes for moms, like me, to search and pin for easy reference!

Happy Meatless Monday!

Mary Kay Review + My Favs

Mary Kay Review

I had the pleasure of attending a Mary Kay Party at my sister’s house this past month. I was able to test so many great products from Mary Kay. If you have never been to a Mary Kay Party let me give you a little heads up, you will enjoy the pampering! Our consultant Tara was amazing! She helped us find the right products for our individual skin type and helped us clarify our skin types. She was so generous, we tested out all the facial products, and then applied numerous shades of blush, eye shadows, lip sick and lip gloss. Here are a few I fell in love with!

Mary Kay @ Play in Earth bound Review by Mom 2 54321

This is the Mary Kay @ Play eye shadow in Earth Bound. I love this one the MOST! I feel it goes with my skin color and brown eyes so well. I used the lighter shade as a highlight, then the brown shade as my crease color, and the green shade as a liner. These colors really kept up with me all day-at the end of the day, Rey even noticed it when he got home from work.

Mary Kay @ Play in Sunset Beach Review by Mom 2 54321

This one is also a Mary Kay @ Play eye shadow in Sunset Beach. I really thought I would be able to play with the purple but at the last-minute I actually subbed in the brown from the Earth Bound instead. I used the lighter white color as my highlight, the coral color-which is the whole reason I had to have this trio-as my crease, and the brown color from the Earth Bound trio as my liner. I will play around with the purple color and see how I like it + post to instagram to show you all.

Mary Kay's Nourishine Plus Lip Gloss in Fancy Nancy Review by Mom 2 54321

This is Fancy Nancy and I love her!! This color is just so perfect for my everyday wear. Not too flashy, but just the right amount of SPARKLE & GLAM-I LOVE IT! I also love that it smells heavenly, isn’t sticky, and is so moisturizing.

I can’t wait to head back for more! I really want to get the bronzer and a few blushes next!

You can find Tara on Facebook by clicking here and see what Mary Kay has to offer you.
