Happy Meatless Monday, I hope you find a great recipe to try this week in honor of Meatless Monday.

Today I am sharing more from Kalyn’s Kitchen. She creates and shares seasonal, low glycemic index meals for healthy eating, weight loss, and blood sugar control.

Another Meatless Monday from Kayln's Kitchen

Starting at the left we have a Spicy Avocado in Pita which is totally something I would happily eat with refried pinto or black beans layered underneath the avocado.

The next recipe is Quinoa with mushrooms, green onions, and parmesan. This one, like many meatless Monday meals can easily be your new favorite side dish. I know I am going to test it out-it looks so good!

The top right is a great seasonal Veggie Stir-Fry. Kalyn gives a great intro into Chinese cooking before this recipe which is really helpful. I also love the amount of garlic this has too! I would love this over rice or noodles.

The last one I CAN’T WAIT TO TRY! It’s Stuffed Zucchini with brown rice, black beans, chiles, cheddar, and cotija cheese.

Petite Patties and Delicous Sides

Hello and Happy Meatless Monday! 

Today I rounded up fun menu on Pinterest!

These Quinoa Patties are not only packed with great protein, but when I glanced over the ingredients, I knew these will be a winner! Thank you to Emily from FrugalLivingNW for sharing this recipe.

The second option are these Zucchini and Ricotta Fritters but the truth is, I think I will make both, I won’t be able to choose which one I want more! This recipe comes from Josie over at Pink Parsley which is the cutest blog.

Next are the sides, I love my sides and I think they really help complete a meal.

Have you tried carrot fries? My grandma actually introduced me to them-you have to try them, they are SO GOOD! This recipe here comes from KitchMe (a pretty cool site) and is pretty similar to my grandma’s recipe.

Fresh tomatoes this time of year cannot be beat! This Baby Heirloom Tomato and Cucumber Salad is bursting with summer freshness! Thanks to the Happy Good Time Blog for this recipe.

Our whole family really loves potatoes, and these Parmesan Smashed Potatoes from Use Real Butter are a perfect compliment to any meal. She has an amazing collection of recipes by the way with perfect photography stop on by and say hello.

Today I wanted to share more from Kalyn’s Kitchen-you know because she is so amazing. She creates and shares seasonal, low glycemic index meals for healthy eating, weight loss, and blood sugar control.

Starting from the left we have a Green Chile and Pinto Bean Layered Mexican Casserole. I am a green chile freak and this recipe sounds and looks amazing. I really love how Kalyn gives great pictures tutorials with great step by step directions. I would keep some beans on the side for the kids as well as make some rice.

The next recipe is the an Asian Quinoa Salad. I give a little tidbit on the great benefits of Quinoa in this recipe here. Quinoa is amazing especially in this salad as it combines with sugar snap peas, red bell pepper, celery, and green onion. Did I mention it has a great homemade dressing that goes over top.

The last recipe for this Monday is the Greek Spinach and Kale Salad with Feta-Lemon Vinaigrette. It looks lovely, I am a big Greek-food fan now! Thanks to my sister, she introduced me to a Greek salad a while back and I am forever grateful.

Meatless Monday

Meatless Mondat collection from foodiecrush


I found another great site I can’t wait to share with you all!

It’s called FoodieCrush, and it’s my new go to place for a great recipe! Heidi has created her own little online world of food Heaven. She has a food fetish, and thank goodness that she decided to share it with the world, because she has great taste.

Starting on the right is a Tortellini Soup with Artichokes which looks so hearty, warm, and with just 30 minutes of prep + cook time till I eat-this is the recipe for me.

The next is a cheesy, gooey, totally adult grilled cheese-it’s a Spinach and Artichoke Grilled Cheese Sandwich. No lie-it just made my stomach growl! Just thinking about what this would smell like makes me want to get into the kitchen right now and make this!

The best was saved for last, it’s a Slow Cooker Vegetarian Lasagna Soup. Any recipe in a slow cooker is a winner in my kitchen but a LASAGNA SOUP-I may just need to create a whole new level of awesome recipes to add this one to it. This one has pasta, cheese, cheese, veggies, and more cheese! There is a meat version available if you prefer to have Meatless on Monday and then the meat version on Tuesday-hey I won’t judge you, but I may join you.

Meatless Monday is back! I have missed a few, but I am getting back on the ball again.

Meatless Monday round-up from kalyns kitchen


Today I wanted to share from a site I found and love Kalyn’s Kitchen. She creates and shares seasonal, low glycemic index meals for healthy eating, weight loss, and blood sugar control.

Starting with the left side we have Kalyn’s Brown Rice and Pinto Bean Salad with Poblano and Red Bell Pepper if I served this to my kids they would have a hissy fit-no lie-picky picky picky-no mixing allowed. So I would leave some beans and rice separate before mixing this all up for them.

The Pinto Bean Salad with Avocado, Tomatoes, Red Onion and Cilantro is on the top right and is something I am dying to try-it just looks so fresh and full of flavor! I would this serve with quesadillas and again leave some beans out for the kids.

The last recipe I have for you today is the Spicy Black Bean Patties with Cilantro, Guacamole, and Tomatoes. This will be a first in our family, but I think they will be a winner because most of us really like black beans. I would serve this with a side of nachos and heavily encourage the kids to try it! Meatless Monday Italian Style

I love, which is probably an understatement, Italian food! Here are a few great recipes to try for a Meatless Monday night!

Eggplant Parmesan: The recipe comes from Food and the City and looks so heavenly drenched in sauces and cheese-MMM! She has great step by step instructions with pictures, I love those sometimes I don’t even read the instruction on these types of post, I just think I know what I am doing from the pictures!

Spinach Artichoke Pizza: Yup you read that right-Spinach and Artichoke!-On a pizza! Genius! I love spinach and artichoke together! I know this will be a winner for me but not the rest of the family so personal homemade pizzas will have to happen. This genius idea came from Lisa over at Wine and Glue-cute name right!? Check her out!

Creamy Spinach Tomato Tortellini: Naloma Kitchen brings us this recipe and it is definitely something I would love to devour! It is also so quick and easy to make just make sure you have the heavy cream and packaged tortellini in your fridge and your pretty much good to go!

Three Cheese Tortellini and Mushroom Soup: I LOVE MUSHROOMS-as a child I would have said I was allergic to mushrooms if you served me this! This recipe comes from Skinny Taste and is a great filling recipe for a meatless Monday. It use baby portabellas my favorite and shiitakes my second favorite!

Meatless Monday Lasagna Edition

I very rarely write my own recipes, I do often though, when I am feeling spontaneous create my own-especially when I am in a mad dash to put anything on the table and haven’t done my weekly shopping! 🙂

Here are a few great recipes from some fellow bloggers, who inspire me to cook great meals for my family!

First recipe I would like to share, is on the top left, and it is a Spinach Lasagna Roll Recipe from Adventures of an Orthodox Mom. I really love spinach lasagna SO MUCH!!

The next is the top right which is a Roasted Vegetable Lasagna from the Sunflower Supper Club, cute name right? I love that this one has a white sauce, I can’t wait to try it!

The bottom left is the Zucchini Noodle Lasagna from Our Life in Click. I love this recipe, it’s one I wouldn’t need to tweek for our family!

Lastly is that amazing Roasted Veggie Lasagna Rollup from The Best Mom on the Block. Love that the rollups make portions and serving a breeze!

I found this recipe in Saveur Magazines archives for Gorditas! Margarita Morales of Fresnillo, Zacatecas, shared the recipe for these crisp, bean-filled corn gordita. They would be great with this Mandarin Mojito from Laylita’s Recipes.

Red Enchiladas are Rey’s FAVORITE! He actually prefers them rolled with meat inside, but this is the way I grew up eating them! Minus the egg never really tried it with an egg.
